INGREDIENTS
• 2 cups chicken broth
• 1 cup vegetable oil
• 12 tortillas
• 2 cups of chicken, cooked and shredded
• 1 cup of sour cream
• 1 cup chopped cilantro
• 1 cup of fresh cheese crumbled
• 1/2 cup onion
• 1 Mole Tia Tere Spicy Red

MOLE PREPARATION
1. Place the contents of Mole Tia Tere into a saucepan.
2. Add 2 cups of chicken broth or water into the saucepan.
3. Cook a moderate heat for 10 minutes, stir constantly until desired consistency.

ENCHILADAS PREPARATION
1. In a pot, add vegetable oil and cook at moderate heat. Lightly fry the tortillas; place on absorbent paper when finished.
2. Heat the chicken in another skillet.
3. Dip each of the tortillas in Mole Tia Tere and add chicken in the center of each one; just like making a taco!
We suggest three enchiladas per serving.
Decorate with sour cream, cilantro, cheese and onion.
TIP: Sprinkle sesame seeds for a more attractive presentation.
