INGREDIENTS:
• A whole chicken (2 ½ kilo), cut into eight pieces
• 3 garlic cloves
• ¼ white onion
• 1 stick of celery
• 2 sprigs of coriander or parsley
• 8 cups of water
• Salt to taste
• 1 Mole Tia Tere Poblano
MOLE PREPARATION
1. Place the contents of Mole Tia Tere into a saucepan.
2. Add 2 cups of chicken broth or water into the saucepan.
3. Cook a moderate heat for 10 minutes, stir constantly until desired consistency.
CHICKEN PREPARATION
Place the chicken pieces in a saucepan and add garlic, onion, celery (cut into 2-3 pieces), and parsley (or coriander). Add the water.
Place the saucepan on the stove over medium-high heat, and when it begins to boil, reduce the heat and cook for 35-45 minutes until the chicken meat is cooked and tender. Season with salt and remove from the stove.
Once ready add the chicken pieces in the mole sauce, season with salt to taste, and cook on low heat for another 5 minutes to mix the flavors well.
TIP: Sprinkle sesame seeds for a more attractive presentation. Enjoy!
